Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, washed and chopped

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Sour cream or Greek yogurt (for serving)

Fresh cilantro or parsley, chopped (for garnish)

Instructions
 

Sauté the Spinach: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach, red pepper flakes, salt, and pepper. Cook until the spinach wilts down, approximately 2-3 minutes. Remove from heat and let cool slightly.

    Mix the Filling: In a bowl, combine the sautéed spinach, crumbled feta, and shredded mozzarella cheese. Mix well to ensure the cheeses are evenly distributed.

      Assemble the Quesadillas: Place a tortilla in a large, clean skillet over medium heat. On one half of the tortilla, spread a generous amount of the spinach and cheese mixture. Fold the tortilla in half to cover the filling.

        Cook the Quesadillas: Cook for about 2-3 minutes on one side until golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 2-3 minutes on the other side. Repeat with the remaining tortillas and filling.
