Ingredients

For the Filling:

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the Crisp Topping:

1 cup old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (e.g., pecans or walnuts) - optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine sliced strawberries and peaches. Add granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently until the fruit is well-coated. Transfer the mixture to a greased baking dish.

Make the Crisp Topping: In another bowl, mix together rolled oats, all-purpose flour, brown sugar, melted butter, cinnamon, and salt. If you’re including nuts, fold them in at this stage. Stir until the mixture is crumbly and well-combined.

Assemble the Crisp: Evenly distribute the crisp topping over the fruit filling in the baking dish, ensuring it covers the fruit completely.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.

Cool and Serve: Remove the crisp from the oven and let it cool for about 10 minutes before serving. It's delightful on its own or served warm with a scoop of vanilla ice cream.
