Ingredients

1 lb ground beef

8 oz egg noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

1 cup bell peppers, sliced (mixed colors for vibrancy)

1 cup green onions, chopped (reserve some for garnish)

1/4 cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon oyster sauce

1 tablespoon brown sugar

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Sesame seeds for garnish

Fresh coriander (optional)

Instructions

Cook the Noodles: In a large pot, bring water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside. Drizzle with a little oil to prevent sticking if desired.

Prepare the Beef: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if necessary.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Incorporate Vegetables: Add the sliced bell peppers and green onions (reserve some for garnish) to the skillet. Stir-fry for about 3-4 minutes until the peppers are slightly tender but still crisp.

Sauce it Up: In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, brown sugar, red pepper flakes, and a pinch of salt and pepper. Pour this sauce over the beef and vegetable mixture. Stir well to ensure everything is coated in the delicious sauce.

Combine Noodles: Add the cooked egg noodles to the skillet, tossing everything together to mix well. Allow the noodles to absorb flavors for about 2-3 minutes. Adjust seasoning if necessary.

Serve: Remove from heat and transfer the Mongolian ground beef noodles to a serving dish. Garnish with sesame seeds, reserved green onions, and fresh coriander if using.

Enjoy: Serve immediately while hot and enjoy your quick and delightful dinner!
