2 large red onions, thinly sliced

3 tablespoons olive oil

2 tablespoons sumac

1 teaspoon sea salt

1 tablespoon lemon juice

1 tablespoon chopped fresh parsley

Optional: chili flakes for heat

In a mixing bowl, combine the thinly sliced red onions with olive oil, sea salt, and sumac. Toss well to ensure all the onions are coated.

    Allow the onions to marinate for at least 15 minutes. The sumac will soften the onions' sharpness and add a lovely tangy flavor. For an even deeper flavor, let them sit for up to an hour.

      After marinating, add the lemon juice and toss again. If you prefer a bit of heat, sprinkle in some chili flakes at this point.
