Ingredients

2 lbs chicken thighs, boneless and skinless

1/4 cup honey

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon sriracha (adjust to taste)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (adjust for spice level)

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt to taste

2 tablespoons vegetable oil

Instructions

Marinate the Chicken: In a mixing bowl, combine honey, soy sauce, apple cider vinegar, sriracha, minced garlic, grated ginger, black pepper, and crushed red pepper flakes. Mix well until combined. Add the chicken thighs to the bowl, ensuring they are thoroughly coated with the marinade. Cover and refrigerate for at least 1 hour, ideally overnight for maximum flavor.

Prepare for Cooking: Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with foil for easier cleanup.

Cook the Chicken: If grilling, brush the grill grates with vegetable oil to prevent sticking. Place the marinated chicken thighs on the grill and cook for about 6-7 minutes on each side, until the chicken is cooked through and has beautiful grill marks. If baking, place the marinated chicken on the prepared baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Glaze the Chicken: During the last 5 minutes of cooking, brush the chicken with any remaining marinade for an extra layer of flavor. You can also broil for a couple of minutes at the end to caramelize the honey.

Serve: Remove the chicken from the grill or oven and let it rest for a few minutes. Slice the chicken and serve it on a platter garnished with chopped green onions and sesame seeds. Pair it with steamed rice or a fresh vegetable stir-fry for a complete meal.
