1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup honey

1 tablespoon fish sauce

2 tablespoons sriracha (adjust for spice level)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

1 tablespoon sesame oil

1/4 cup chopped fresh cilantro (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

In a bowl, whisk together the soy sauce, honey, fish sauce, sriracha, minced garlic, grated ginger, and lime juice to create a marinade.

    Add the chicken pieces to the marinade. Cover and let it marinate for at least 30 minutes in the refrigerator (up to overnight for stronger flavor).

      Heat vegetable oil in a large skillet or wok over medium-high heat.

        Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

          Add the sliced onions and bell peppers to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

            Pour in the reserved marinade over the chicken and vegetables, adding sesame oil. Let it cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

              Remove from heat and garnish with chopped cilantro.

                Serve hot over jasmine rice for a delicious meal.
