2 boneless, skinless chicken thighs (about 1 lb), cut into bite-sized pieces

1 cup uncooked jasmine rice

2 cups water or chicken broth (for cooking rice)

1 tablespoon vegetable oil

1/4 cup soy sauce

2 tablespoons mirin (Japanese sweet rice wine)

1 tablespoon honey or brown sugar

1 teaspoon fresh ginger, minced

2 cloves garlic, minced

1 teaspoon sesame oil

1/2 cup broccoli florets (optional)

1/2 cup red bell pepper, sliced

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice and water or chicken broth. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 more minutes.

    Prepare Teriyaki Sauce: In a small bowl, mix together the soy sauce, mirin, honey (or brown sugar), minced ginger, and minced garlic. Set aside.

      Sauté the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add the chicken pieces to the skillet and sauté for about 5-7 minutes, or until the chicken is cooked through and lightly browned.

        Add Vegetables: If using broccoli and bell pepper, add them to the skillet in the last 3 minutes of cooking. Stir occasionally to combine.
