2 cups cooked chicken breast, chopped

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or canned)

1 red bell pepper, diced

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup chopped romaine lettuce

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

Tortilla chips, for garnish (optional)

Instructions
 

Prepare the Chicken: If using raw chicken, grill or bake the chicken breasts until fully cooked (internal temperature should reach 165°F). Allow to cool, then chop into bite-sized pieces.
