4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup honey

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 cup diced fresh pineapple

2 green onions, sliced (for garnish)

Fresh cilantro (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the fresh pineapple juice, soy sauce, honey, minced garlic, grated ginger, sesame oil, black pepper, and red pepper flakes until well combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 4 hours for more flavor).

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

        Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully browned and cooked through.

          Prepare the Pineapple Glaze: While the chicken is grilling, pour the leftover marinade into a small saucepan. Bring it to a gentle simmer over medium heat and add the diced fresh pineapple. Cook for about 5-7 minutes, or until the pineapple is tender and the sauce has thickened slightly.

            Glaze the Chicken: Once the chicken is cooked, brush some of the warm pineapple glaze over the grilled chicken for added flavor.
