12 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

      Add Garlic and Vegetables: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes. Then, stir in the chopped spinach and cook until wilted.

        Create the Sauce: Reduce the heat to medium-low. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning. Let it cook for 2-3 minutes until the sauce thickens slightly.

          Combine: Return the cooked chicken to the skillet and add in the drained pasta. Toss well to coat the pasta and chicken with the creamy sauce. Taste and adjust seasoning if necessary.
