Ingredients

1 ½ lbs ground beef (80/20)

1 cup mashed potatoes (prepared, leftover or freshly made)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (about 4-5 strips)

1/2 cup diced green onions (plus extra for garnish)

1/4 cup milk

1/4 cup ketchup

1/4 cup breadcrumbs

1 large egg

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika (optional for a smoky flavor)

Additional shredded cheese for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Mix Ingredients: In a large mixing bowl, combine ground beef, mashed potatoes, shredded cheddar cheese, crumbled bacon, diced green onions, milk, ketchup, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix until all ingredients are well incorporated, but be careful not to over-mix.

Shape the Meatloaf: Transfer the meat mixture onto the prepared baking sheet or into the loaf pan and shape it into a loaf form. If desired, you can create a small well in the center to hold additional toppings.

Top It Off: If you like, sprinkle additional shredded cheese on top of the meatloaf for an extra cheesy crust.

Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). If using a loaf pan, it may take a bit longer.

Rest: Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes. This will help it firm up and make it easier to slice.

Serve: Garnish with additional chopped green onions before slicing. Serve hot with your favorite side dishes such as a salad or roasted vegetables.

Enjoy: Dig in and savor the hearty combination of flavors that make this loaded potato meatloaf truly ultimate!
