1 pound ground chicken

1 cup fresh spinach, finely chopped

1 cup white cheddar cheese, shredded

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning

Salt and pepper to taste

4 whole wheat burger buns

Fresh arugula or lettuce for topping

Tomato slices for garnish

Olive oil for cooking

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, chopped spinach, shredded white cheddar cheese, breadcrumbs, diced red onion, minced garlic, Dijon mustard, Italian seasoning, salt, and pepper. Mix until well blended but do not overwork the meat.

    Form the Patties: Divide the mixture into four equal portions and shape each portion into a round patty, about ¾ inch thick. Make a slight indentation in the center of each patty; this will help them cook evenly.

      Preheat the Grill or Pan: Heat a grill or a large skillet over medium heat and drizzle with a little olive oil to prevent sticking.

        Cook the Patties: Place the patties on the grill or skillet. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the burgers are nicely browned. If using cheese, add a slice on top of each patty during the last minute of cooking and cover to melt.

          Assemble the Burgers: Toast the whole wheat buns lightly on the grill or in a toaster. Place each cooked patty on the bottom half of the bun, top with fresh arugula or lettuce, and add tomato slices.
