Ingredients

1 lb ground chicken

1 cup fresh spinach, finely chopped

1 cup white cheddar cheese, shredded

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon Dijon mustard

1 egg, beaten

4 whole wheat burger buns

Optional toppings: avocado slices, tomato, lettuce, and additional cheddar

Olive oil for grilling

Instructions

In a large mixing bowl, combine the ground chicken, finely chopped spinach, white cheddar cheese, breadcrumbs, Parmesan cheese, minced garlic, onion powder, salt, and black pepper.

Add the Dijon mustard and the beaten egg to the mixture, and mix everything together until well combined.

Form the mixture into four patties about 3/4 inch thick. Make sure they are slightly larger than the burger buns as they will shrink during cooking.

Heat a drizzle of olive oil in a skillet over medium heat or preheat your grill to medium-high.

Cook the chicken patties for about 5-7 minutes on each side, or until they are cooked through and reach an internal temperature of 165°F (75°C). Depending on thickness, the time may vary.

For an extra cheesy touch, add a slice of white cheddar on top of each patty during the last minute of cooking to melt slightly.

Toast the whole wheat burger buns on the grill or in a toaster until golden brown.

Assemble your burgers by placing a patty on the bottom half of the bun. Add optional toppings such as avocado slices, tomato, and lettuce. Top with the upper half of the bun.

Serve the burgers immediately with your choice of sides, such as sweet potato fries or a fresh salad.
